Fruit and nuts in a salad? Why, Yes! We eat a lot of salad, and this recipe is a great celebration of flavor. This could be served either with or without meat, but we prefer it with grilled chicken breast. The combination of flavors and textures is awesome, but there is a specific way we do it (which we’ll explain).

Base Salad Ingredients

1 head lettuce
2 cups chopped baby spinach
2 cups chopped spring mix
3 medium tomatoes (your choice, but we use Roma regularly)
1 lemon
1 lime
1/2 bunch of green onions (chopped)
4oz (about half bag) Shredded Cheese (we use 2% Cojack)

Chop up all of the base salad ingredients in a large bowl and mix well. Squeeze the juice of the lemon and the lime over the mixture.

Meat Mixture Ingredients

1 lb chicken breast
1 onion (chopped)
1 green pepper (chopped)

You could use any meat in this salad (including say turkey lunch meat). We chop up the chicken breast, season it, and cook it on med-high with the chopped onion and green pepper.

Salad Topping Ingredients

Tortilla strips
1 package raspberries
1 bag shelled pistachios

To assemble, just take your salad bowl and fill with the salad mixture. Next add your meat mixture on top. Then top with your tortilla strips, and nuts and berries in the middle. I think this is best served with both some light or fat free blue cheese and sweet french dressings – but use your own taste.
