Salsa in the jar can be good, but there’s nothing like having some freshly made chunky salsa in the kitchen to eat with tortilla chips.  Salsa is a very healthy and flavorful food, the only (calorie counting) thing you have to worry about is how many chips you eat.  We tend to get reduced fat or baked tortilla chips for just that very reason.

There are many ways to make salsa from the food processor, but what I prefer to do is chop what I need, throw it in a bowl, mix it up – and just eat it fresh.  Many would call our version “pico de gallo”, but I just call it good.

Ingredients

  • 1 large sweet onion chopped
  • 2 medium green peppers choppped
  • 1 medium yellow, red, or orange pepper chopped
  • 1 jalapeno chopped (or more or none depending on what you like)
  • 1 tbsp minced garlic (jar or fresh)
  • 1/3 cup chopped fresh cilantro chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • juice of 2 limes (always fresh)
  • juice of 1 lemon (always fresh)
  • 1 tbsp sugar or sugar substitute
  • 1 tbsp sea salt
  • 1/2 tsp black pepper
  • 1 tbsp ground cumin
  • 1 tsp garlic powder
  • about 8 medium to large roma tomatoes chopped (or about 4 cups of whatever kind of tomatoes you like)

That’s about it – chop, mix, and eat!
